
Summer can be a challenging time for families facing food or financial insecurity – especially when children are home from school and household budgets stretch thin.
That’s why PROP Food is urging the community to help stock its shelves this July by supporting its “Open Your Heart to Our Neighbors in Need” campaign, part of the 16th annual statewide “Open Your Heart to the Hungry and Homeless Challenge.”
The Eden Prairie-based nonprofit is already seeing higher demand in 2025, after a record-setting year. PROP served 5,164 individuals in 2024 – a 28% increase from the year before. And in just the first nine months of this year’s food programs, PROP has reported a 10% uptick in food shelf visits compared to the 8,621 logged in 2024.
“Providing food to someone who needs it is an act of love,” said PROP Executive Director Jenifer Loon. “In our community, we are seeing an increasing number of individuals seeking relief from food insecurity.”
Historically, PROP experiences a decline in donations during the summer, just as demand tends to rise.
Financial contributions made to PROP during July are eligible for a proportional match through the statewide challenge. Last year, 153 participating food shelves across Minnesota collectively raised nearly $3 million, with grant funds distributed based on local totals.

PROP Food, a registered 501(c)(3) nonprofit, provides nourishment and comprehensive support to Eden Prairie and Chanhassen residents facing challenges related to food, housing or employment.
